The Chef

Emilio is a chef, famous for his exquisite flavours. He works closely with his sous-chef, Theresa, in order to create delicious, new flavours in traditional French cuisine. He has won several awards, so people travel from far and wide to try his food. However, Emilio is not like other chefs.

Five years ago, Emilio was diagnosed with laryngeal cancer. This means he had dangerous tumours in his throat. Thankfully, the treatment and surgery to remove the cancer were successful and didn’t result in the loss of his voice. Unfortunately, however, the radiation therapy was so aggressive that he lost the function of his taste buds. This, to Emilio, was even worse than losing the ability to speak. How could he work without his taste buds? He was renowned for the unique tastes of his food.

One night he had a nightmare that he had to pass his restaurant over to his newly employed sous-chef, but when he woke up, he wasn’t saddened by his dream. Actually, he was inspired. For two weeks, he was teaching Theresa everything that he knew about dough, sauces, herbs and spices, cheese, wine, pasta, and what flavours go nicely with others. It was intensive, and Theresa was exhausted, but by the end of this culinary crash course, she shared the same knowledge as the great Emilio Richelieu.

They both worked hard to come up with a system for Theresa to explain the flavours that she could taste to Emilio, and for him to tell her how to enhance or correct the flavours. Even though Emilio lost the ability to taste, he was able to keep his restaurant after all. The restaurant became increasingly popular for news stories due to the fact that the Head Chef couldn’t even taste the food he was creating.

“Mr Richelieu, how do you continue to produce amazing food without the ability to taste?” asked a news reporter.

“Well,” he began, closing in on the microphone, “I taught my sous-chef everything I knew about food. So, I tell her what I want meals to taste like, and because she knows how I would cook the meal, we are able to create new, delicious meals together and keep this beautiful restaurant open.”
